Ingredients
  

  • 1 cup pistachios unsalted, shelled
  • 1 ½ cups all-purpose flour
  • 1 cup sugar
  • ½ cup butter softened
  • 3 eggs
  • 1 cup milk
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • ¼ tsp salt
  • Few drops green food color optional

Method
 

  1. Preheat oven to 180°C (350°F) and grease a cake pan
  2. Grind pistachios into a fine powder
  3. Beat butter and sugar until light and fluffy
  4. Add eggs one at a time and mix well
  5. Stir in vanilla extract
  6. Mix flour, pistachio powder, baking powder, and salt in a bowl
  7. Add dry ingredients to wet mixture alternately with milk
  8. Mix gently until smooth batter forms
  9. Add food color if using and mix lightly
  10. Pour batter into prepared pan
  11. Bake for 30–35 minutes until a toothpick comes out clean
  12. Let cake cool before slicing and serving

Notes

Use fresh pistachios for the best flavor
Do not overmix the batter to keep the cake soft
Allow the cake to cool fully before cutting
You can top with whipped cream or cream cheese frosting
Store in an airtight container for up to 3 days
