- In a saucepan, whisk milk, sugar, cornstarch, and ground pistachios until smooth.
- Cook over medium heat, stirring constantly, until mixture thickens.
- Remove from heat and stir in butter and vanilla extract.
- Pour pudding into serving bowls.
- Chill in the refrigerator for at least 1 hour.
- Garnish with whipped cream or chopped pistachios before serving.
