Ingredients
  

  • 4 salmon fillets 6 oz each
  • 1/2 cup fresh cranberries
  • 1/3 cup orange juice
  • 2 tbsp honey
  • 1 tbsp Dijon mustard
  • 1 tsp orange zest optional
  • 1 tbsp olive oil or butter
  • Salt & pepper to taste
  • Fresh herbs for garnish optional

Method
 

  1. Preheat oven to 400°F (200°C).
  2. In a small saucepan, combine cranberries, orange juice, honey, mustard, and zest; simmer 7–10 mins until thickened.
  3. Pat salmon dry and season with salt and pepper.
  4. Sear salmon in a hot pan with oil or butter 2–3 mins per side until golden (optional).
  5. Brush salmon with cranberry-orange glaze and bake 8–12 mins until flakey.
  6. Spoon extra glaze over salmon and garnish with herbs if desired.

Notes

  • Fresh cranberries give the best flavor, but frozen work too.
  • Don’t overcook salmon; it should flake easily with a fork.
  • Leftover salmon keeps well 2–3 days in the fridge.
