Method
- Preheat oven to 400°F (200°C).
- In a small saucepan, combine cranberries, orange juice, honey, mustard, and zest; simmer 7–10 mins until thickened.
- Pat salmon dry and season with salt and pepper.
- Sear salmon in a hot pan with oil or butter 2–3 mins per side until golden (optional).
- Brush salmon with cranberry-orange glaze and bake 8–12 mins until flakey.
- Spoon extra glaze over salmon and garnish with herbs if desired.
Notes
- Fresh cranberries give the best flavor, but frozen work too.
- Don’t overcook salmon; it should flake easily with a fork.
- Leftover salmon keeps well 2–3 days in the fridge.
