Ingredients
  

  • Orecchiette pasta 250 g
  • Olive oil 2 tablespoons
  • Italian sausage casing removed 2 pieces
  • Garlic cloves minced 3
  • Onion finely chopped 1 small
  • Fresh spinach 2 cups
  • Heavy cream ½ cup
  • Parmesan cheese grated ½ cup
  • Salt to taste
  • Black pepper to taste
  • Red chili flakes optional ½ teaspoon
  • Reserved pasta water ½ cup

Method
 

  1. Boil orecchiette pasta in salted water until al dente and reserve ½ cup of pasta water before draining
  2. Heat olive oil in a pan and cook the sausage until browned and slightly crispy
  3. Add chopped onion and garlic, and sauté until soft and fragrant
  4. Add spinach and cook until wilted
  5. Pour in heavy cream and stir well to combine
  6. Add grated Parmesan cheese and mix until creamy
  7. Add cooked pasta to the pan and toss everything together
  8. Pour in reserved pasta water as needed to loosen the sauce
  9. Season with salt, pepper, and chili flakes and serve warm

Notes

Use good-quality sausage for the best flavor
Do not skip pasta water, as it helps create a silky sauce
Avoid overcooking spinach to keep its color and texture fresh
Add extra Parmesan on top before serving for more richness
