- Heat oil and brown beef chunks in a pan
- Add carrots, potatoes, onion, and garlic to slow cooker
- Place browned beef on top of vegetables
- Pour in beef broth, tomato paste, and Worcestershire sauce
- Add salt, pepper, and thyme
- Cover and cook on low for 7–8 hours or high for 4–5 hours
- Mix flour with water and stir in to thicken stew
- Cook additional 20–30 minutes until thickened
- Taste and adjust seasoning before serving
Notes
Browning beef adds extra flavor—don’t skip it
Avoid adding too much liquid to keep stew thick
