Ingredients
  

  • 1 cup pumpkin puree
  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • ½ cup brown sugar
  • ¼ cup white sugar
  • ½ cup unsalted butter melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup chocolate chips optional

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix melted butter, brown sugar, and white sugar in a large bowl until smooth.
  3. Add egg, pumpkin puree, and vanilla extract and mix well.
  4. Stir in flour, oats, baking soda, cinnamon, nutmeg, and salt until a soft dough forms.
  5. Fold in chocolate chips if using.
  6. Scoop tablespoon-sized portions of dough onto the prepared baking sheet.
  7. Bake for 10–12 minutes until edges are set and centers remain soft.
  8. Let cookies cool on the baking sheet for a few minutes before serving.

Notes

Use pure pumpkin puree, not pumpkin pie filling.
Do not overbake if you want soft and moist cookies.
You can add nuts or raisins for extra texture.
Store cookies in an airtight container for up to 3 days.
