Ingredients
  

  • 2 large steaks ribeye or sirloin
  • 4 medium potatoes cubed
  • 3 tbsp butter
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tbsp fresh parsley chopped
  • 1 tsp thyme or rosemary
  • Salt and pepper to taste

Method
 

  1. Season steaks generously with salt and pepper and set aside.
  2. Boil or par-cook potatoes for 5-7 minutes, then drain.
  3. Heat olive oil in a pan and cook potatoes until golden and crispy.
  4. Add butter, garlic, and herbs to the potatoes and toss well.
  5. In another pan, sear steaks over high heat for 3-5 minutes per side.
  6. Add a knob of butter to the steak and baste while cooking.
  7. Let steak rest for 5 minutes, then serve with herb butter potatoes.
