Method
- In a bowl, beat cream cheese with powdered sugar and vanilla until smooth.
- Spread cream cheese mixture evenly over each tortilla.
- Arrange sliced strawberries on top of the cream cheese layer.
- Roll up tortillas tightly and wrap in plastic wrap.
- Refrigerate for at least 30 minutes to firm up.
- Slice into bite-sized roll ups and serve.
- Garnish with fresh mint if desired.

- Use fresh, ripe strawberries for maximum sweetness.
- Chill before slicing to maintain shape.
