Ingredients
  

  • 2 cups fresh strawberries hulled and halved
  • 2 cups ripe peaches peeled and sliced
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon optional
  • Pinch of salt
  • 1 pre-made pie crust or homemade
  • 1 egg beaten for egg wash
  • Turbinado sugar for topping optional

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Mix strawberries, peaches, sugars, cornstarch, vanilla, cinnamon, and salt in a bowl.
  3. Place bottom pie crust in a 9-inch pie dish.
  4. Pour fruit mixture into the crust.
  5. Cover with top crust and cut vents for steam.
  6. Brush top crust with beaten egg and sprinkle sugar if desired.
  7. Bake 20 minutes at 400°F, then reduce heat to 350°F and bake 25–30 more minutes.
  8. Cool for 1–2 hours before slicing and serving.

Notes

Use thawed and drained frozen fruit if fresh is unavailable.
Adjust sugar depending on fruit sweetness.
Add spices like nutmeg for a twist.
Double the recipe for larger gatherings.
Serve with vanilla ice cream for extra yum.
