Ingredients
  

  • 1 pre-baked pie crust
  • 3 cups fresh strawberries halved
  • 1 cup sugar
  • 2 tbsp cornstarch
  • 1/2 cup water
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • Whipped cream for serving optional

Method
 

  1. In a saucepan, combine sugar, cornstarch, and water.
  2. Cook over medium heat, stirring constantly until thick and glossy.
  3. Remove from heat and stir in lemon juice and vanilla extract.
  4. Let the glaze cool slightly.
  5. Arrange fresh strawberries in the pre-baked pie crust.
  6. Pour the glaze evenly over the strawberries.
  7. Refrigerate for at least 2-3 hours until set.
  8. Serve chilled with whipped cream if desired.

Notes

  • Use fresh, ripe strawberries for the best flavor.
  • Chill well to help the pie set properly.
  • You can add a strawberry gelatin mix for a firmer glaze if preferred.
