Method
- In a saucepan, combine strawberries, sugar, and ½ cup milk; cook over medium heat until strawberries soften.
- Blend mixture until smooth using a blender or immersion blender.
- Return to saucepan and whisk in remaining milk and cornstarch.
- Cook, stirring constantly, until pudding thickens.
- Remove from heat and stir in vanilla extract.
- Pour pudding into serving dishes and chill for at least 1 hour.
- Top with whipped cream or sliced strawberries if desired.
Notes
- Adjust sweetness according to taste and strawberry ripeness.
- Chill thoroughly for best texture.
- Can use almond or coconut milk for a dairy-free version.
