Ingredients
  

  • 2 cups fresh or frozen strawberries chopped
  • ½ cup sugar or sweetener of choice
  • 2 tbsp cornstarch
  • 2 cups milk
  • 1 tsp vanilla extract
  • Optional: whipped cream or sliced strawberries for topping

Method
 

  1. In a saucepan, combine strawberries, sugar, and ½ cup milk; cook over medium heat until strawberries soften.
  2. Blend mixture until smooth using a blender or immersion blender.
  3. Return to saucepan and whisk in remaining milk and cornstarch.
  4. Cook, stirring constantly, until pudding thickens.
  5. Remove from heat and stir in vanilla extract.
  6. Pour pudding into serving dishes and chill for at least 1 hour.
  7. Top with whipped cream or sliced strawberries if desired.

Notes

  • Adjust sweetness according to taste and strawberry ripeness.
  • Chill thoroughly for best texture.
  • Can use almond or coconut milk for a dairy-free version.
