Ingredients
  

  • 8 oz 225 g pasta of your choice
  • 1 cup sun-dried tomatoes oil-packed
  • 2 cloves garlic minced
  • 1 small onion finely chopped (optional)
  • 1/2 cup heavy cream or coconut cream
  • 1/4 cup grated Parmesan or vegan alternative
  • 2 tbsp olive oil
  • 1/2 tsp chili flakes optional
  • Salt & pepper to taste
  • Fresh basil or parsley for garnish

Method
 

  1. Boil pasta in salted water according to package directions, reserve 1 cup pasta water.
  2. Heat olive oil in a pan, sauté garlic and onion until fragrant.
  3. Add sun-dried tomatoes and stir for 2–3 minutes.
  4. Pour in cream, simmer 3–4 minutes until slightly thickened.
  5. Toss cooked pasta into the sauce, adding reserved pasta water if needed.
  6. Season with salt, pepper, and chili flakes to taste.
  7. Sprinkle Parmesan and garnish with fresh basil or parsley.
  8. Serve immediately and enjoy!

Notes

  • Use oil-packed sun-dried tomatoes for extra flavor.
  • Adjust creaminess with reserved pasta water.
  • For a vegan option, use coconut cream and nutritional yeast instead of Parmesan.
  • Optional protein: add grilled chicken, shrimp, or tofu.
