Ingredients
  

  • 1 cup mashed sweet potato
  • 4 eggs
  • 1/4 cup coconut oil melted
  • 1/3 cup coconut flour
  • 1 tbsp honey or maple syrup
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon optional
  • 1/2 tsp vanilla extract

Method
 

  1. Preheat oven to 175°C (350°F) and grease or line a loaf pan
  2. Whisk eggs in a bowl until smooth and slightly frothy
  3. Add mashed sweet potato, coconut oil, honey, and vanilla extract, and mix well
  4. In another bowl, combine coconut flour, baking soda, salt, and cinnamon
  5. Gradually mix dry ingredients into wet ingredients until fully combined
  6. Pour batter into prepared loaf pan and smooth the top
  7. Bake for 40–50 minutes until a toothpick inserted comes out clean
  8. Allow bread to cool completely before slicing

Notes

Make sure the sweet potato is smooth and not watery for the best texture
Do not overmix the batter to keep the bread light and soft
Let the bread cool fully before cutting to avoid crumbling
Store in an airtight container in the fridge for up to 5 days
You can add nuts, raisins, or chocolate chips for extra flavor
