Ingredients
  

  • Chicken 1 kg, bone-in or boneless
  • Yogurt 1 cup, thick
  • Lemon juice 2 tbsp
  • Ginger garlic paste 2 tbsp
  • Oil 2 tbsp
  • Red chili powder 1 tsp
  • Turmeric powder 1 tsp
  • Garam masala 1 tbsp
  • Cumin powder 1 tsp
  • Coriander powder 1 tsp
  • Salt 1 tsp or to taste
  • Paprika 1 tbsp
  • Food color optional, few drops

Method
 

  1. Wash and pat dry the chicken pieces.
  2. Make deep cuts in the chicken for better marination.
  3. Mix yogurt, lemon juice, ginger garlic paste, oil, and spices in a bowl.
  4. Coat chicken thoroughly with the marinade.
  5. Cover and marinate for at least 4 hours or overnight.
  6. Preheat grill or oven to medium-high heat (200°C).
  7. Place chicken on grill or baking tray.
  8. Cook for 25–30 minutes, turning halfway through.
  9. Brush oil or butter while cooking for extra juiciness.
  10. Cook until fully done and slightly charred on edges.
  11. Serve hot with lemon wedges and onions.

Notes

Marinate overnight for the best flavor and tenderness.
Use thick yogurt to avoid a watery marinade.
Adjust spice level according to taste.
Do not overcook to keep chicken juicy.
You can also cook this in an air fryer.
