Method
- Heat olive oil in a medium pot over medium heat.
- Add chopped onions and cook until soft, about 4–5 minutes.
- Stir in minced garlic and cook for 30 seconds.
- Add chopped or canned tomatoes and cook for 5 minutes.
- Pour in broth, add salt, pepper, sugar, and basil.
- Simmer for 15–20 minutes to blend flavors.
- Blend the soup until smooth using an immersion or regular blender.
- Stir in heavy cream if using and mix well.
- Taste and adjust seasoning as needed.
- Serve hot, garnished with fresh basil and a drizzle of olive oil if desired.
Notes
- Use ripe tomatoes for the best flavor.
- Add cream at the end to avoid separation.
- Can be made dairy-free with coconut milk.
- Perfect with grilled cheese or crusty bread.
