Ingredients
  

  • 2 tablespoons olive oil
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 5 –6 fresh tomatoes chopped (or 1 can crushed tomatoes)
  • 2 cups vegetable broth or chicken broth
  • 1 teaspoon sugar
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried basil
  • ½ cup heavy cream optional
  • Fresh basil for garnish optional

Method
 

  1. Heat olive oil in a medium pot over medium heat.
  2. Add chopped onions and cook until soft, about 4–5 minutes.
  3. Stir in minced garlic and cook for 30 seconds.
  4. Add chopped or canned tomatoes and cook for 5 minutes.
  5. Pour in broth, add salt, pepper, sugar, and basil.
  6. Simmer for 15–20 minutes to blend flavors.
  7. Blend the soup until smooth using an immersion or regular blender.
  8. Stir in heavy cream if using and mix well.
  9. Taste and adjust seasoning as needed.
  10. Serve hot, garnished with fresh basil and a drizzle of olive oil if desired.

Notes

  • Use ripe tomatoes for the best flavor.
  • Add cream at the end to avoid separation.
  • Can be made dairy-free with coconut milk.
  • Perfect with grilled cheese or crusty bread.
