- Cook bacon in a pan until crispy, then chop and set aside.
- In a bowl, whisk eggs with heavy cream, salt, and pepper.
- Melt butter in a pan and scramble eggs on medium heat until soft.
- Add cooked bacon, sausage, and cheese into the eggs and mix until melted.
- Warm the low-carb tortilla in a dry pan for 20–30 seconds.
- Add filling to the center of the tortilla and top with optional extras.
- Fold sides in and roll tightly into a burrito.
- Optional: Toast burrito in a pan for 1–2 minutes per side for crispiness.
Notes
Don’t overcook the eggs or they’ll turn dry and rubbery.
