White Chocolate Raspberry Blondies Recipe

Ingredients
  

  • 1 cup unsalted butter melted
  • 1 ½ cups brown sugar
  • 2 large eggs
  • 1 tbsp vanilla extract
  • 2 cups all-purpose flour
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 cup white chocolate chips
  • 1 cup raspberries fresh or frozen

Method
 

  1. Preheat oven to 180°C (350°F) and line a baking pan with parchment paper
  2. Mix melted butter and brown sugar until smooth
  3. Add eggs and vanilla extract, and mix well
  4. Stir in flour, baking powder, and salt until just combined
  5. Fold in white chocolate chips evenly
  6. Pour batter into prepared pan and spread evenly
  7. Add raspberries on top and gently swirl into the batter
  8. Bake for 25–30 minutes until edges are golden and the center is set
  9. Cool completely before slicing into squares

Notes

Do not overmix the batter to keep blondies soft and chewy
Use frozen raspberries without fully thawing to avoid excess moisture
Slightly underbake for a fudgier texture
Let blondies cool completely for clean slices
Store in an airtight container for up to 3 days
