Ingredients
  

  • 2 pie crusts top and bottom
  • 3 cups cherries fresh or frozen, pitted
  • 3/4 cup sugar
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract optional
  • 1 tbsp butter
  • 1 egg for egg wash

Method
 

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix cherries, sugar, cornstarch, lemon juice, vanilla, and almond extract.
  3. Place one pie crust in a pie dish and pour in the cherry filling.
  4. Dot the filling with small pieces of butter.
  5. Cover with the top crust or lattice design and seal the edges.
  6. Brush the top with beaten egg and cut small slits for steam.
  7. Bake for 40-45 minutes until crust is golden and filling is bubbly.
  8. Let the pie cool before slicing and serving.

Notes

  • Adjust sugar based on the tartness of cherries.
  • Let the pie cool completely for cleaner slices.
  • Serve with vanilla ice cream for extra indulgence.
