Ingredients
  

  • 200 g digestive biscuits
  • 100 g melted butter
  • 400 g cream cheese
  • 1 cup heavy cream
  • 3/4 cup powdered sugar
  • 1/3 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract

Method
 

  1. Crush digestive biscuits into fine crumbs
  2. Mix crumbs with melted butter until combined
  3. Press mixture firmly into a lined pan to form the base
  4. Refrigerate the base for 15–20 minutes
  5. Beat cream cheese until smooth and lump-free
  6. Add powdered sugar and mix well
  7. Stir in lemon juice, lemon zest, and vanilla extract
  8. Whip heavy cream until soft peaks form
  9. Fold whipped cream gently into the cream cheese mixture
  10. Pour filling over the chilled crust and smooth the top
  11. Refrigerate for at least 4–6 hours or until set
  12. Slice into bars and serve chilled

Notes

Use fresh lemon juice for the best flavor
Do not skip the chilling time for proper setting
Soften cream cheese before mixing to avoid lumps
Press crust firmly to prevent crumbling
Store leftovers in the refrigerator for up to 5 days
