Ingredients
  

  • 3 –4 ripe bananas sliced
  • 1 package vanilla wafers about 12–15
  • 2 cups milk
  • 1 cup heavy cream
  • 3 egg yolks
  • ½ cup sugar
  • 3 tbsp all-purpose flour
  • 1 tsp vanilla extract
  • Pinch of salt

Method
 

  1. In a saucepan, heat milk over medium heat until warm.
  2. Whisk egg yolks, sugar, flour, and salt in a bowl until smooth.
  3. Slowly pour warm milk into the egg mixture while whisking constantly.
  4. Return mixture to saucepan and cook, stirring constantly, until thickened.
  5. Remove from heat and stir in vanilla extract.
  6. Whip heavy cream until soft peaks form, then fold into the pudding mixture if desired for extra creaminess.
  7. In a serving dish, layer vanilla wafers, banana slices, and pudding; repeat layers.
  8. Chill for at least 2 hours before serving.

Notes

  • Use ripe bananas for maximum sweetness and flavor.
  • Allow pudding to chill to set properly.
  • Optional: top with whipped cream or extra vanilla wafers for garnish.
